Peanut Chicken

Ingredients

4 chicken breasts
2 teaspoons ginger
1 teaspoon pepper
1/2 teaspoon chili (according to taste)
2 large tablespoons crunchy peanut butter
1 tablespoon soy sauce
crushed roasted peanuts
some water
cooking oil
2 large green peppers
1 large spring onion
basmati rice

Directions

  1. Cut the chicken into bite sized pieces and start rosting the peanuts if they're still raw.
  2. Mix the black pepper, ginger and chili
  3. Fry the chicken in peanut butter and gradually add the spice mixture. Some water (or chicken stock) will help in distributing the spices more evenly and create a some sauce
  4. As soon as chicken is ready, stir fry the green peppers and onions in oil and soy sauce.
  5. Add the chicken pieces to the stir fried vegetables
  6. Serve with basmati rice

Tips for next time

  • Add more crushed peanuts crushed at different sizes.
  • Add more peanut butter
  • Try replacing the cooking oil with peanut butter oil
  • Use chicken stock instead of water and make a thicker sauce
