Peanut Chicken

Ingredients
4 chicken breasts
2 teaspoons ginger
1 teaspoon pepper
1/2 teaspoon chili (according to taste)
2 large tablespoons crunchy peanut butter
1 tablespoon soy sauce
crushed roasted peanuts
some water
cooking oil
2 large green peppers
1 large spring onion
basmati rice
Directions
- Cut the chicken into bite sized pieces and start rosting the peanuts if they're still raw.
- Mix the black pepper, ginger and chili
- Fry the chicken in peanut butter and gradually add the spice mixture. Some water (or chicken stock) will help in distributing the spices more evenly and create a some sauce
- As soon as chicken is ready, stir fry the green peppers and onions in oil and soy sauce.
- Add the chicken pieces to the stir fried vegetables
- Serve with basmati rice
Tips for next time
- Add more crushed peanuts crushed at different sizes.
- Add more peanut butter
- Try replacing the cooking oil with peanut butter oil
- Use chicken stock instead of water and make a thicker sauce
